Big Easy Breakfast

1/2 lb. Smoked Sausage, cut in 1/2-inch-slices, quartered
2/3 c. Oil
8 c. frozen Southern-style Hashbrown Potatoes
1/2 c. Green Pepper, chopped
6 Velveeta Slices, cut diagonally in 1/2.

Cook sausage in large skillet over medium heat until lightly browned. Remove from skillet with slotted spoon. Add oil; heat over medium heat. Add potatoes and peppers. Cover and cook 8-10 minutes or to desired crispiness. Stir in sausage. Remove from heat and top with cheese slices.
