4 c. Shell or Elbow Macaroni, cooked,drained and chilled
2 c. Lunch Meat, cubed
1/2 c. Carrots, grated or diced (optional)
1/2 c. Celery, chopped
1 c. Mayonnaise
4 Eggs, hard-boiled
2 tsp. Mustard
1/4 c. Sweet Pickle liquid
1/2 c. Sweet Pickle, chopped
1/4 c. Red Onion, minced
Black Pepper, to taste
Parsley, to taste
2 c. Cheddar Cheese, cubed
Add all ingredients to large mixing bowl. (Make sure mixture is completely cool before adding cheese to prevent it from melting.) Gently stir until evenly mixed.
