Fiesta Sandwiches

1 medium Tomato, diced
1 small Onion, diced
1 Green Pepper, diced
Vinegar
Slices of Monterey Jack Cheese
1 can diced Green Chiles
Bread
Eggs

In a medium bowl, combine tomato, onion and green pepper. Add vinegar to moisten vegetables. Place slices of cheese on bread. Spoon green chiles over cheese and top with another piece of bread to make a sandwich. Crack eggs into pie tin or plate. Mix yolk and whites with a fork and dip whole sandwich into the egg. Place on griddle or frying pan. Brown both sides and top with vegetable mixture.
