Farmer's Brunch Casserole

3 c. Frozen Hashbrowns
3/4 c. shredded Cheddar Cheese
1 c. diced cooked Ham, Sausage or both
1/4 c. Onion, diced
4 Eggs, beaten
1-12 oz. can Evaporated Milk
1/4 tsp. Pepper
1/8 tsp. Salt

Grease 8-inch square pan. Arrange potatoes evenly on bottom. Sprinkle with cheese, meat and onion. Combine eggs, milk, salt and pepper. Pour egg mixture over potato mixture. (Can be refrigerated several hours or overnight.) Bake uncovered at 350 degrees for 45-50 minutes or 60-65 minutes if made ahead and chilled. Bake till center is set. Let stand 5 minutes before serving.
