Baked Ziti

This recipe makes LOTS!! (2-9 x 13 pans worth!) Half recipe if only cooking for one family.

Preheat oven to 350 degrees.

2 lbs. Ground Beef
1 lrg. Onion, chopped
7-1/2 c. Spaghetti Sauce
1-1 lb. pkg. tube-shaped Pasta (Ziti) (about 6 c.)
3 c. shredded Mozzarella Cheese
1/2 c. grated Parmesan Cheese

Cook and drain pasta. Set aside. Cook ground beef and onion in an 8 qt. sauce pot over medium heat until beef is well browned, stirring often to separate meat. Pour off any fat. Stir the sauce, pasta and 2 c. mozzarella cheese into sauce pot. Spoon mixture into 2-9 x 13 pans. Top with remaining mozzarella and parmesan cheeses. Bake at 350 degrees for 30 minutes or until beef mixture is hot and cheese is melted.

To make ahead: Prepare as directed above but do not bake. place in 2 foil pans and cover with foil. Freeze. Bake the frozen ziti uncovered at 350 degrees for 1 hour or until hot.

Serving suggestion: Serve with zucchini cut into thinly sliced ribbons (use veggie peeler) and sauteed in olive oil. Sprinkle with grated parmesan cheese.
